Sweet & Spicy Ground Turkey Teriyaki Bowl
Bowls, which typically involve a combination of protein, grains, and vegetables, are an excellent way to get a ton of vitamins and nutrients while still making an easy and tasty meal. This ground turkey teriyaki bowl is one of our favorites.
This particular recipe uses a combination of flavors like soy sauce, monk fruit, red pepper, and rice vinegar to create a delicious sweet-and-spicy bowl with ease. Feel free to experiment by swapping the broccoli for your other favorite vegetables, such as carrots, peppers, or mushrooms. You can even add some sweetness with pineapple. For a vegetarian version, switch out the ground turkey for tofu, chickpeas, or lentils.
This meal serves four, making it an excellent meal-prepped lunch for your week or dinner with loved ones. Enjoy!
Sweet & Spicy Ground Turkey Teriyaki Bowl
Ingredients:
- 1 lb lean ground turkey
- 1/4 cup low-sodium soy sauce
- 1 tbsp sesame oil
- 1-2 tbsp monk fruit sweetener (adjust to taste)
- 1/2 tbsp cornstarch
- 1 tbsp water (for dissolving cornstarch)
- 1/2 tsp red pepper flakes (adjust to spice preference)
- 1 tbsp rice vinegar
- 2 cups broccoli florets
- 1 cup cooked basmati rice
Instructions:
- Brown the turkey:
- In a non-stick skillet, brown the ground turkey over medium heat, breaking it up into small pieces. Cook until fully browned and no longer pink.
- Make the sauce:
- In a small bowl, dissolve cornstarch in 1 tbsp water until smooth.
- In another bowl, mix soy sauce, sesame oil, monk fruit sweetener, red pepper flakes, and rice vinegar. Add the dissolved cornstarch mixture to this sauce.
- Add sauce and broccoli:
- Pour the sauce over the browned turkey and stir to combine.
- Add the broccoli florets to the pan and cook everything together for about 2 minutes until the broccoli is tender-crisp.
- Serve:
- Serve the turkey and broccoli mixture over a portion of cooked basmati rice.
