Made with seasoned chicken breast, Laughing Cow cheese, and a bit of spicy through Frank’s Red Hot Buffalo Sauce, this dip pairs perfectly with crisp carrot chips and celery. Whether you’re meal prepping or serving it fresh, this recipe is sure to become a go-to appetizer for any occasion.

Buffalo Chicken Dip

Ingredients:

  • 8 oz chicken breast (about 1 medium breast)
  • 1 Laughing Cow cheese wedge
  • 2-3 tbsp Frank’s Red Hot Buffalo Sauce (adjust to taste)
  • 2 tbsp nonfat Greek yogurt
  • 1 1/2 tsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper (to taste)
  • Carrot chips and celery (for serving)

Instructions:

  1. Season and bake the chicken:
    • Preheat the oven to 375°F (190°C).
    • In a zip-lock bag or bowl, add the olive oil, paprika, garlic powder, onion powder, salt, and pepper. Add the chicken breast to the bag or bowl and toss until the chicken is evenly coated with the seasoning mixture.
    • Place the chicken breast on a baking sheet lined with parchment paper or foil.
    • Bake for 20-25 minutes, or until the internal temperature reaches 165°F (75°C).
    • Remove the chicken from the oven and let it rest for 5-10 minutes. Then, shred it using two forks.
  2. Prepare the buffalo chicken dip:
    • Combine the shredded chicken, Laughing Cow cheese wedge, Frank’s Red Hot Buffalo Sauce, and non-fat Greek yogurt in a microwave-safe bowl. Microwave for two minutes. Let cool for one minute and stir. 
  3. Serve:
    • Serve the dip with carrot chips and celery for dipping.
  4. Meal prep option:
    • You can prepare the dip ahead of time and store it in an airtight container in the fridge for up to 3 days. Reheat in the microwave or on the stove when ready to serve.
